The following are some of the many dishes I enjoy preparing for friends and family. Grilling meat, seafood, and vegetables is my absolute favorite. I also enjoy the complexity of Indian Cuisine, French decadence, and Japanese simplicity.

Norteño Tacos

I love the rich flavors of Mexican grilled meats and crisp vegetables. Norteño Tacos are made with Mesquite grilled chicken or skirt steak, cilantro, onion, molcajete salsa, and queso fresco on a double corn tortilla.

Hawaiian Garlic Shrimp

Garlic shrimp are reminiscent of my many trips to the North Shore of Hawaii. Two famous food trucks receive droves of visitors year round to indulge in the buttery/garlicky goodness of fresh sauteed shrimp over fluffy rice. I’ve made the dish my own by adding layers of complexity and depth of flavor. I can’t wait to share it with you.

Cast Iron Ribeye

It all begins with a well seasoned cast iron skillet and a thick-cut grass-fed steak. Rosemary, Thyme, and Garlic bring the beautifully marbled protein to life with carmelizing maillard reactions over high heat for a perfect sear. Served with purple potatoes and grilled tomato and onion. You don’t want to miss this.

Maryland Crab Cake Stuffed Salmon

Seafood is my absolute favorite. The buttery tenderness of a well prepared salmon fillet is heaven to me. Sustainably-caught, this delicate fish is stuffed with Maryland style crab and served over wilted baby spinach and cheddar grits with scallions.

Bell Pepper & Vegetarian Dirty Rice

Meat Eaters shouldn’t have all the fun. Using ‘Sweet Earth’ veggie grounds, fresh herbs, spices, onion, wine, and buffalo mozzarella together never tasted so good steamed with jasmine rice. Served over garlic spinach coconut cream sauce.

Kerala Fried Chicken & Curry Leaf

India is home to some of the most complex and rich spices in the world. I am always in awe of how much depth of flavor there is in Indian cooking. This fried chicken is proof. Buttermilk marinated with mint, coated with almond and coconut flour, and topped with fresh fried curry leaves. This one is a show stopper.
